Butternut Squash Brussels Bake

  • 1 Butternut Squash (Seeds removed and cubed)

  • 1lb of Brussels Sprouts (Stem removed and cut in half)

  • 1 Red Onion (Slices work best)

  • 1 Package of Pre-Cooked Chicken Italian Sausage (I use Al Fresco Sweet Italian Style, cut into rounds)

  • Avocado oil or Olive oil spray

  • Foil

  • Large Baking Sheet

  • Salt and Pepper to taste

Preheat your oven to 450 degrees. Line with heavy-duty tin foil and spray with oil. Add cubed squash, halved Brussels sprouts, sliced red onion, and chicken Italian sausage cut into slices. Add salt and pepper, and more cooking spray on top. Bake for 20-25 minutes, stirring halfway through to ensure even cooking.
