Pureed Diet: Refried Beans with Avocado, Mexican Cheese, and Enchilada Sauce

  • 1 can of Refried Beans (Fat Free or Regular)

  • 1 jar or can of enchilada sauce

  • 1/2 avocado

  • 1/4 cup finely shredded mexican cheese

  • Salt and finely ground pepper to taste

  • Optional: Taco seasoning and plain non-fat yogurt as “sour cream”

Put 2-3oz of refried beans onto a microwave safe plate or bowl. Add 1-2oz of enchilada sauce (I prefer red) and shredded Mexican cheese. Microwave for 1 minute on high. Top with mashed avocado, taco seasoning, or a glob of yogurt to taste.
